Aussie Grassfed Orange Beef & Broccoli Stir-fry

Where to buy Aussie Grassfed Beef
1 fresh broccoli crown (14 ounces) - cut into florets (3 cups)
1 tablespoon corn starch
1 1/2 pounds Aussie Grassfed boneless New York strip steak - sliced across the grain into thin strips, pat dry, divided
kosher salt / fresh finely ground black pepper
2 tablespoons avocado oil or peanut oil + extra
4 garlic cloves - minced, divided
2 oranges - zest of 1, freshly squeezed (1/2 cup) - divided
2 teaspoons sugar
1/4 cup hoisin sauce
1/4 cup less sodium teriyaki sauce
1/2 teaspoon sesame seeds
Bring salted water to a rolling boil in a 4-quart pot over high heat. Add broccoli and cook until tender crisp, about 2 minutes. Remove to a salted ice bath (large bowl, filled with salted ice water) to stop the cooking and preserve the green color. When cooled. Drain. Pat broccoli dry. Set aside.
Mix corn starch with 1 tablespoon cold water in a small cup. Set aside.
Season Aussie Grassfed beef with 1 1/2 teaspoons salt and 12 turns on the pepper mill on both sides.
Heat wok over high heat or 12-inch frying pan over medium-high heat. When wok or pan is heated, add 2 tablespoons oil. When oil is heated and shimmers. Add half of the beef and 1/3 of the garlic. Stir-fry until browned on both sides, 2 minutes. Remove beef to large bowl. Repeat with remaining beef and another 1/3 of the garlic.
{Note: if wok or pan is dry, add a little more oil} Remove beef to the same bowl.
Add remaining garlic to the wok or frying pan. {Add a little more oil, as needed.} Sauté until fragrant, 30 seconds.
Deglaze with orange juice. Whisk in sugar. Reduce by half, 30 seconds.
Whisk in hoisin, teriyaki, orange zest and season with 1/2 teaspoon salt and 5 turns on the pepper mill. Cook 1 - 2 minutes until flavors combine. Re-whisk corn starch slurry and whisk into the sauce until thicken, about 20 seconds.
Return beef to the wok or pan. Add broccoli. Toss to evenly coat in the sauce and warm through, 1 minute. Serve family style with rice on the side if desired.
Garnish with sesame seeds.
